We are a looking for head chef to join the team.

The Head Chef is responsible for ensuring that the standards quality, and hygiene of the food production within the department is maintained at the highest level at all times. He/She is responsible for overseeing, leading and inspiring the entire kitchen operations to ensure the kitchen runs smoothly at all times and in creating consistent quality dishes for our Guests

Kitchen management

• Ensure that the preparation, quality, and taste of all food items are according to our recipes and standards.
• Ensures that hygiene, health, safety and fire safety procedures are put in place, updated and being followed according to standards set by laws and regulations.
• Continuously update and implement necessary SOP’s and ensure that set standards are being followed.
• Ensure that all training manuals and food book are correct and up-to date.
• Daily report to and inform management of any immediate concerns.
• Liaising recruitment together with management and HR. Follow proper hiring procedures regards to probation time, appraisals, disciplinary actions as well as keeping a record of these with management.
• Ensures correct staffing in all designated areas in order for the daily operation to run smoothly.
• Maintaining and enhancing the food products through creative menu development and presentation.
• Suggest and create new recipes including specials weekly or monthly. Coordinate costing proposal together with management and accounts.
• Suggest new menu items based on seasonal local produce and guest request. Be alert on changes and research new trends on the market.

Financial and Stock Control

• Review costing regularly.
• Set strategies for growth and agreeing on targets together with management.
• Maintain updated records of daily, weekly and monthly costs, wastages and expenses.
• Ensures proper team member coverage and scheduling according to the needs of the business while maintaining target labour costs.
• Work along with Management and Accounts to manage and control cost of all the items being used.
• Carry out supplies ordering.
• Ensure all deliveries are received correctly and logged in stock system and that all utilized storage areas are clear, well-organized, and easy to use.
• Maintain effective stock control, storage and rotation to minimise wastage. Monitor sales and stocks on an on-going basis including monthly stock checks in coordination with Accountant and Management.
• Ensure proper hygienic storage methods are utilized to prevent food loss.
• Contact and review suppliers and prices on an ongoing basis to ensure value for money, revert updates to management and Accounts.
• Log invoices and petty cash receipts and ensure that all financial procedures are carried out correctly.
• Carry out monthly inventories (as well as on request by Accounts) and be accountable of discrepancies.
• Review the menu in collaboration with other key personnel, including setting mark-up prices.
• Plan new menus, dishes and purchasing of new ingredients ahead of time and coordinate with Management and Accounts.
• Log recipes, ingredients, costing, and suppliers.
• Pay careful attention to the operating budgets of the department to ensure that costs are controlled to maintain the correct levels of spending skills and abilities required
• In coordination with Management maximise promotional and sales opportunities.


Education and Experience Requirements
• 5+ years of culinary education.
• At least 5 years of management experience is required.
• Advanced knowledge of food professional principles and practices.
• Excellent knowledge of BOH systems, ordering and inventory.
• Excellent communication skills.
• Ability to meet deadlines
• Food Safety Certificate/ Knowledge
• Deep understanding of Food allergens such as Vegan, Dairy Free, Gluten Free
